Eggs are versatile. They can be scrambled, fried, boiled, baked, microwaved, or poached in minutes, making them perfect for a quick breakfast.

Today, I want to discuss why and how freezing eggs should be part of your cost-effective kitchen. They can also make your life so much easier on weekday mornings!

What Kinds Of Eggs Can You Freeze?

Let’s get right to the point. Yes, you can safely freeze eggs. You can freeze cooked eggs, liquid eggs, and even raw eggs once they are removed from their shell. You can also freeze many dishes that contain eggs and even homemade breakfast sandwiches. However, the quality of the thawed eggs will vary and your uses of the thawed eggs may be limited. You can freeze eggs for up to a year, but it’s best to use them within 1 to 6 months for the best quality.

When you’re considering freezing eggs on a regular basis, you need the right equipment. Here’s a list of the items I use on a regular basis to freeze a variety of raw and cooked eggs. You probably have the majority of these items already. But in case you don’t, here’s a list for you!

  • Non-Stick Muffin Pans (affordable, multi-use product)
  • Covered Ice Cube Trays (these aren’t just for eggs)
  • Freezer-Safe Disposable Bags
  • Air-Tight Freezer Safe Containers
  • Aluminum Foil Sheets (perfect for breakfast sandwiches and wrapping baked potatoes)
  • Measuring Cups
  • Measuring Spoons
  • Hand-held blender or Immersion Blender
  • Freezer Labels
  • Black Sharpies (you can use other colors, but black is much easier to read in the freezer)

Yes, you can freeze raw scrambled eggs.

How Long Do Frozen Scrambled Eggs Keep?

If wrapped and frozen properly, cooked scrambled eggs by themselves can keep up to one year. 

However, for the best quality, consume eggs within one to six months. 

On the other hand, breakfast sandwiches containing eggs need to be eaten within a month or two.

Bagels, croissants, and English muffins don’t do well frozen after a month or so. They start to dry out and sometimes pick up “off-flavors.”

So, if you make breakfast sandwiches with bagels, croissants, or English muffins, it is best to eat them within a month or two, while the quality of the bread is still good.

If you freeze frozen breakfast burritos, the tortillas’ quality will last a little longer, but for quality purposes, I wouldn’t go past two or three months.

TIP: The better you wrap your items meaning the less air that can get to them, the longer the quality.

Can You Freeze A Cooked Omelet?

Yes, you can freeze a cooked omelet for up to one year, but for the best quality, use it within 3 to 6 months.

Cooked omelets can be reheated in the oven or in the microwave.

TIP: My favorite way to get grab-and-go omelets is to cook and freeze them in a non-stick muffin pan. Once frozen, remove the omelet and put it into a freezer-safe bag. Reheat in the microwave for up to around a minute (depending on your microwave) and enjoy a quick omelet without!

Step By Step Guide

  • Do not overcook the eggs. You want them to look a bit moist but not dry- a little “wet” looking. This will help keep them from turning rubbery when thawed and reheated.
  • Make sure to add some salt. This will help your eggs retain moisture.
  • Let your eggs cool thoroughly before freezing.
  • Divide them into individual portion sizes. At this point, you could premake breakfast sandwiches or use a measuring cup or muffin tin to portion out the eggs.
  • Prior to placing in the freezer, wrap all eggs with plastic wrap and/or aluminum foil. The plastic wrap and foil will help protect your eggs against freezer burn. Be sure to squeeze out as much air as possible to prevent freezer burn.
  • Freeze-wrapped items in a single layer or place inside of an airtight, freezer-safe container.
  • Label, label, label. Be sure to label each container with the date frozen and the exact contents.

How To Thaw And Reheat Scrambled Eggs

The best way to thaw frozen eggs of any kind is overnight in the refrigerator.

In the evenings, when you are pre-packing lunches for the next day, take your frozen eggs or egg sandwich out of the freezer and pop into the fridge.

The next morning all you need to do is reheat the eggs or breakfast sandwich.

Be careful if reheating in the microwave.

Remove the eggs from the plastic or aluminum foil and place the eggs on a microwave-safe plate.

Do not reheat wrapped in plastic or aluminum foil.

If you are worried your eggs will dry out, you can always place a damp napkin over the dish before reheating in the microwave.

And then be sure to heat in 20 or 30-second increments until your dish is properly reheated.

The time it takes to reheat your dish will depend totally on what it is and how powerful your microwave is.

If you find your reheated foods a little chewy or tough to eat, you can always choose to reheat for a longer period of time on less power.

Can You Freeze Fried Eggs?

Yes, you can freeze fried eggs, but often the texture becomes rubbery and sometimes crumbly.

If you insist on freezing fried eggs, I would combine them in a breakfast sandwich and use them within a month for the best quality.

Just to let you know, I NEVER freeze fried eggs.

Can You Freeze Hard-Boiled Eggs?

Yes, you can freeze hard-boiled boiled eggs. But I wouldn’t do it unless you want to save the yolks.

The cooked yolks hold up well to freezing, the egg whites not so much. 

Once thawed, the egg whites are nasty. Just plain nasty.

When thawed, the egg whites release a lot of water and become rubbery, tough, and chewy.  

So while you can freeze hard-boiled eggs, I wouldn’t do it unless you wanted to save the yolk. 

If you had some hard-boiled eggs that needed to be eaten or frozen, here’s what I would do.

You can eat the egg whites as a snack or chop them up in a salad. Then, you can freeze the egg yolks only.

Freeze the yolks in an airtight freezer-safe bag or container.

Once the yolks are thawed, make a deviled egg mixture and use it (without the whites) as a spread on a sandwich. Ever had a toasted bacon and tomato sandwich with “egg salad” spread? Oh, my goodness.

However, if you want to be a kitchen rebel, experiment by freezing one or two hard-boiled eggs to minimize the potential loss. If you try it and the thawed eggs are ok, then go for it! 🙂

Yes, you can freeze raw eggs in a recipe.

Can You Freeze Deviled Eggs?

Like with hard-boiled eggs, technically, you can freeze deviled eggs, but my recommendation is not to. 

I find the egg whites chewy, rubbery, and tough.

The yolk mixture may or may not be nasty, depending on the other ingredients you use to make your deviled eggs, like mayonnaise.

Note: While you can freeze mayonnaise, it may very well separate as it thaws, rendering your deviled egg yolks nasty. 

Again, you can freeze deviled eggs, but I just don’t do it!

Can You Freeze Frittatas Or Egg Casseroles?

Yes, you can freeze frittatas and egg casseroles.

The quality of the frittatas and casseroles will depend on how well the other ingredients do when frozen. 

You can freeze the frittatas and casseroles whole or divide them into individual portions prior to freezing. 

Can You Freeze Whole Raw Eggs In The Shell?

No, you can’t freeze whole raw eggs in the shell successfully. When you try to freeze raw eggs in their shell, the shell shatters.

Remember, water expands when frozen. 

So when the water inside the shell freezes, it will expand and shatter the shell.

Avoid throwing away your money, and don’t try to freeze raw eggs in the shell. 

Can You Freeze Whole Raw Eggs Removed From The Shell?

Yes, you can successfully freeze raw eggs once they are removed from their shell.

How To Freeze Whole Raw Eggs Successfully

In order to freeze whole raw eggs successfully, remove them from their shell.

Then blend them until the yolks and whites are just combined and store in a freezer-friendly container. You can use a hand mixer, but I prefer my immersion blender.

Do not beat them to death like you were going to make scrambled eggs.

Remember, mix just until the yolk and whites are combined.

And then salt them to your taste as if you were about to cook them.

How To Thaw Frozen Raw Eggs

I recommend thawing raw eggs in the refrigerator and using them the day they are thawed.

TIP: One fresh egg equals approximately three tablespoons of thawed eggs.

Can You Freeze Raw Egg Whites?

Yes, you can freeze raw egg whites. Freezing raw egg whites and yolks separately gives you more flexibility once thawed.

How To Freeze Raw Egg Whites

Once separated, freeze egg whites in an airtight, freezer-safe container.

TIP: Freeze one egg white per ice cube tray. Once frozen, transfer to an airtight, freezer-safe container. This will speed up thawing and allow for more accurate measuring!

Can You Freeze Egg Yolks?

Yes, you can freeze egg yolks successfully with a little extra preparation before freezing.

How To Freeze Egg Yolks

Before you freeze egg yolks, you must decide whether you will be using them in savory or sweet dishes.

This is because egg yolks will thicken or gel when frozen, often rendering them useless in recipes.

For each egg yolk, you want to freeze for savory dishes, you want to add a smidgen of salt (1/32 tsp).

Yes, I do have a smidgen measuring spoon. It is 1/32 of a teaspoon.

If you don’t have a smidgen measuring spoon, just take about 1/4th of a 1/8th teaspoon per egg yolk or a full ⅛ teaspoon for every 4 yolks you freeze.

For egg yolks you will use for sweet dishes, the measurements are a little easier.

You will need ⅜ teaspoon of sugar for each egg yolk or about 1 ½ teaspoon for every four yolks you freeze.

I recommend following my tip above and freezing each yolk and egg white in individual ice cube trays first, then transferring to a freezer-safe bag or container.

Remember to label the container appropriately.

You want to include whether you added salt or a sweetener (sugar or corn syrup) to the egg yolks and how much was added per yolk.

Depending on your dish and the number of frozen yolks used, you may need to adjust your recipe for sugar and salt.

You may also substitute corn syrup one to one for the sugar. 

So you will be using ⅜ tsp of corn syrup per egg yolk.

How To Thaw And Use Frozen Raw Eggs

Frozen raw eggs, if stored properly, will last up to one year.

Thaw them overnight in the refrigerator or under cold running water.

In a pinch, you may also thaw eggs in the microwave on its defrost setting.

You want to use the thawed eggs right away and be sure they are cooked thoroughly in whatever recipe you are using them in.

TIP: If you plan on beating thawed egg whites for volume, let them sit out at room temperature for around 30 minutes before beating.

Can You Freeze Liquid Eggs?

The Egg Safety Center considers liquid eggs a refrigerated egg product. Unopened containers of liquid eggs can be frozen for up to one year.

When defrosting liquid eggs, only defrost as much as you need and never refreeze once thawed.

Be sure to use them within 3 days of thawing.

Can You Freeze Fresh Eggs?

If you are fortunate enough to get fresh eggs, you can freeze them just like store-bought eggs. Just be sure they are fresh and cleaned thoroughly before cracking them open to freeze.

How Long Are Eggs Good For Past Their Sell-By, Use-By, Or Expiration Date?

If properly refrigerated, raw eggs will retain their quality for 2 to 3 weeks (sometimes longer) after the date listed on their carton.

How To Tell If My Eggs Have Gone Bad?

Here’s how to test your eggs to make sure they have not gone bad.

Take a 2-cup measuring cup, fill it with about 1 1/2 cups of water, then carefully place one egg at a time into the cup.

  • An egg that lays down on the bottom is good.
  • If the egg stands on one end, it is older but good.
  • But, if the egg floats, it is too old to eat, and you should discard it.

This works because eggshells are semipermeable, which means air can move through the shell. The older the egg, the more air, causing it to float.

If you ever find an egg that floats, you will also notice it is much lighter than a normal egg.

You could also do multiple eggs at once in a large clear bowl. Just be sure you don’t crowd the bowl and have enough water so that each egg has room to lay down, stand up, or float to the surface.

How To Thaw And Reheat Breakfast Sandwiches With Eggs

You can reheat breakfast sandwiches from frozen in the microwave or oven, but it will take 5 minutes or so in the microwave and around 10-15 minutes in the toaster oven.

Reheating frozen breakfast sandwiches in the microwave can cause them to become dry and rubbery, so proceed with caution.

If you are looking for a quicker morning option, thaw the sandwiches in the refrigerator overnight.

TIP: In the evenings, when you are cleaning up the kitchen after dinner or prepping lunches for the next day, remove tomorrow morning’s breakfast sandwiches from the freezer to the fridge. It’ll make reheating them that much quicker in the morning. 🙂

In my home, there is a time and a place to freeze eggs. It all depends on your situation and what you’re trying to accomplish. Do you want to save time or money? At what point are you willing to cut your losses? Do you want to freeze because you’re worried about availability?

Let’s think about this for a minute. Let’s say you pay .60 cents for a dozen eggs at your local Aldi. That breaks down to 5¢ each. 

Even if you had a dozen eggs, would the cost of your plastic wrap and freezer bags warrant freezing a dozen eggs? 

But more importantly, is it worth your time and effort to properly freeze 12 eggs? Or 36 eggs?

For me, that is an absolute NO! Unless I am worried about food shortages, at which point, I would absolutely freeze a whole lot of eggs.

Instead of freezing leftover eggs that need to be used up, I make a batch of egg salad, cook a quiche, or have scrambled eggs and pancakes for dinner. I also boil them all up and use them on salads, make deviled eggs, or as a snack.

As you can see, it is NOT worth my time to freeze eggs just because they are getting old. It is not cost-effective for me. It costs me too much money, time, and effort.

However, I am all about making things easier on busy weekday mornings. It is a challenge to get everyone out the door, to school, and to work on time.

I believe freezing make-ahead freezer-friendly breakfast sandwiches are well worth your time and effort. They are a lot cheaper and healthier than the local drive-thru or the frozen breakfast items you buy in the store. So, go ahead and freeze some grab-and-go breakfast sandwiches.

We love to use bacon, ham, or sausage with eggs and cheese on English muffins, bagels, or flour tortillas. You can also use some frozen veggies like peppers, onions, and mushrooms!
